Can anyone make a sensible and economical suggestion for canapes - got myself volunteered into making 3 doz for a concert - don't know where to start - far too up market for a simple country bumpkin like myself Roll Eyes

What about;

Mini yorkshire puddings with a little piece of roast beef and a dab of horseradish
Baby potatoes roasted and a dab of cream cheese with chives on the top
Mini pizzas using wraps spread with pesto and dotted with crumbled goats cheese. Place in a hot oven for 5 minutes and slice into wedges.

I know this has nothing to do with canapes but can someone give me the recipe 4 chicken stuffed with lemon and herbs by jamie oliver cause i have been looking everywhere for it Frown Frown

Glad Jan's suggestions went down well.
If you ever have to do canapes again there's a wonderful book which was recommended on here ages ago, and which I bought - 'Canapes' by Eric Treuille and Victoria Blashford-Snell, published by DK. It really is the only book you'll ever need. I've used it so many times and always find something different to make.

Piglet,

Can't remember it verbatum but I do a variation try this.

Take a good measure of butter and soften it with a fork, add a few soft chopped herbs, some chopped garlic and the grated rind of a lemon. Take a couple of slices of streaky bacon chop into small pieces, if you are being cheffy Lardons - and fry until crisp - mix into butter add salt and pepper. Lift skin of the Chicken and push mixture underneath skin - place an onion inside the Chicken with a lemon cut into two halves, and place a couple of cut lemons around the Chicken in the roasting pan - roast in the normal way - I roast mine upside down for the first 20 mins so that the juices run into the chicken - it gives a more moist texture to the meat. Once I turn it over I place another couple of slices of streaky bacon on the top. Hope this helps and the zap squad don't get at it. Roll Eyes
