does anyone have a recipe for banana cake.or banana and orange.ect
please help.i have lost my recipe.

Eric Lanyard does a beautiful Seville Orange Cake.

Here's one I got given.

Banana sponge.

Basic sponge mixture (in case you haven't got it)
1 egg
60g Self raising flour
60g butter
60g sugar just beat it all together with an electric whisk or in a food processor

Use one small banana to one egg.

(if banana is used I put in a bit of extra flour as it makes the mixture quite wet)
Bake at 170c/ gas 4/5
You can multiply this endlessly

This is fab - makes 2 cakes - freezes really well.

9oz Self Raising Flour
10 oz sugar
4 oz margarine
2 eggs
½ tsp salt
½ tsp vanilla essence
½ tsp bicarbonate of soda
2-3 ripe bananas

Put all ingredients except bananas into a bowl,
Mix on medium speed. When well blended add mashed bananas
Pour into 2 loaf tins - (lined with greaseproof paper, greased & lightly floured to prevent cake sticking)
bake at 190C/gas mark 5 for 25- 30 mins or until done - you may have to cover top to prevent overbrowning

So simple and very yummy - enjoy
