quick easy and healthy

my pal is going through chemo at the moment and i would like to make her a quick easy but healthy supper dish that i can prepare earlier in the day so whenshe gets home from hospital all she'll have to do is put it in the oven. she dosn't like any thing too spicy, plain and simple would be best Smile any suggestions

Very sorry to read that your friend is going through chemo, my family have had much experience of this treatment over the last few years so 'the very best to your friend' from me.
I've recently had lots of work carried out on my teeth and have devised a really tasty soup that's light on the stomach, easy to eat and prepare.

Two fresh chicken breasts, diced very small and browned off in a light olive oil, added to a large onion that has been softened in butter or grape seed oil in a medium sized pan. Add some fresh chicken stock (or this can made from a pint of boiled water and a chicken stock cube) Add salt & pepper to season, bring to the boil and simmer for about twenty minutes. I usually then add boiled, softened potatoes and frozen peas, or you can finely dice spinach or water cress for the last five minutes. (carrots I've found are not easy to digest and can cause a few digestive problems)
This soup is a really healthy source of food and very nutritional too, light on the stomach which in your friends case will be so important. It can be warmed up and kept in the fridge for at least two days and can also be frozen too.

I have serious health problems too - this recipe is quick and simple as well as nutritious. (serves 2)

1 leek chopped
2 carrots grated
2 chicken breasts
sliced musrooms
Assorted mixed herbs of your choice
4 anchovies
A thimble full of white wine and a knob of butter.

Make a parcel out of foil or greaseproof. Lay on it your choped and grated vegetables, with a small knob of butter. Fill your chicken breast with a mixture of herbs of your choice. Sprinkle with pepper. Top with anchovies. You can if you like wrap it in pancetta ham and brown the stuffed chicken breasts before putting it into your parcel to cook in a moderate oven for about 20minutes or place it straight onto your vegetables.

This recipe also works well with a piece of salmon fillet.
