Mini Cheesecake flavours?

Hello all, not been on for ages (soz) but here's one for you. Me and some of the girls have been going on a bout having a get together - somehow this conversation developed into my beloved white chocolate cheesecake (so decadent and yet so simple with digestive base and just melted white chocolate and mascapone cheese for the filling).

Anyway there's only going to be the four of us but one doesn't like white chocolate, one wants toffee and the other is an after 8 fiend. So I decided to create individual cheesecake for everyone to try. i have bought the moulds (amazing thing from lakeland, looks like a normal fairy cake tray but with bases that pop out). There are 12 moulds (but i may not do all of them, 3 each seems a bit like overload, but who knows, I might).

Sooooo, I was wondering... I only want to do non bake cheesecakes for ease and my theory is I can take basic receipe and just add to it in small measures (lots of washing up though boo!).

So, if I do at least one of each flavour (or should I do two? yes probably two!), I have to do white chocolate and an after 8 mint one, but what else? Just wondering what suggestions would come in and how to add the said ingredients

For a toffee one you could buy a bag of good quality toffees, melt them down over a low heat and add to your basic mix, or ripple through.

For your chum who doesn't like white choc you could do a dark choc one and stir in some grated orange/lemon/lime zest.

Melted Terry chocolate orange bars, drained tinned raspberries in juice, passionfruit, lemon juice and zest - all added to your basic cheese mix.

They sound gorgeous. Definately doing the toffee one, but was thinking that for a bit of 90's nostalgia i would add some fudge pieces to make it like Gino Ginelli ice cream - always adored that!

Also, any ideas on how I'd go about making a turkish delight one? Would I just add rose water to taste?

How about mini Bailey's cheesecakes. Mix some mascarpone, icing sugar and a splosh of Baileys. Dead easy and really yummy... I sometimes use the same cream mix to fill profiteroles and then pour on gorgeous warm chocolate sauce. Big Grin

baileys cheesecakes are great!!!try adding some fresh mint into the mascarpone..... naughty nut nice Wink
