can i please have an ordinary macaroni cheese
recipe from anyone and then i may be able to adapt
it to suit my cows milk intolarance.

hi batman, all you need is a bechamel sauce recipe with added cheese. use equal quantities of butter and flour about 40gms melted in a pan and mixed thoroughly. add 1 pint of milk in four stages heating slowly between stages. this can be goats milk or any other heat stable non dairy creamer. for a nice touch heat the milk seperatly and infuse it with some smoked bacon and red chilli. great twist on a classic. sorry forgot cheese quantities a mix of cheddar and parmesan is good. obv not cows though. Smile

Hello batman....

This must be the quickest, easiest mac and cheese recipe ever.

8oz dry macaroni
4floz cream
7floz milk
4oz grated hard cheese of your choice
salt and pepper

Cook macaroni as per packet instructions. Drain and put back in saucepan, then add cream, milk and grated cheese and stir over a low heat until the cheese melts and the mixture is thick. Season to taste. I like to add a little bit of English mustard to give it a bit of a zing.

rosti, i cant use cows milk but i thought i
might be able to adapt a normal recipe!

Which is the best soya milk to use in savoury dishes? Some can taste quite sweet due to the apple juice content I guess... any tips?

Macaroni cheese:

225g macaroni, 225g cheese - non cow variety! -goat's?,85g butter/marg, 1.2 ltr milk (use a soya one), 85g plain flour,
1 teasp. wholegrain or french mustard
Oven 200C. Gas 6.
Cook macaroni until soft.. Drain and sprinkle wth olive oil to stop going sticky.

Make cheese sauce: Grate cheese. Melt butter in non stick pan, add flour and mix together cooking until colour of sand ( making a roux). Add milk gradually stirring continuously till smooth, then cook till starts to thicken- still stirring. Take off heat add most of cheese, save a handful for sprinkling on top, then add mustard and stir in. Pour in macaroni, mix together, then put in an oven proof dish and sprinkle with remaining cheese. Bake for about 20 mins till golden. (If you like ham or bacon you can add a few slices cooked and chopped at the adding to the oven dish stage. Veggie's codl add a handful of halved cherry toms instead. Enjoy with a crispy salad.
