I wondered if it is ok to reuse Goose Fat after say, roasting potatoes etc. It is the best for crispy potatoes and always seems a waste to discard it,as it's not cheap, what do you do ?

Yes, just keep using it and keeping it, strain out any crispy bits etc then keep in the fridge and it will last for ages. If you use it for any strong flavours like garlic I would store it seperately rather than putting it back with any or the original.

Try a reputable mail order company - Harrods, Carluccio`s, etc or Google for goose fat ( sounds faintly obscene!!!)

In a glass jar isn't it Fudgey, the Tesco one? The Sainsbury's one (in a tin with a black label from memory) sometimes disappears unless it's Christmas or Easter of course!
