Hi
I wonder (hope) if someone can help me. I have recently moved to the south of Spain (Costa Blanca) and am at a loss to find fresh cream. They only appear to sell Nata (which isn't quite the same) or Elmlea (which I haven't tried, but am a bit nervous). I really want to make some ice-cream out here but without fresh cream feel that I won't be able to (let alone making custard for my Christmas pudding in December). Any thoughts/tips/advice would be greatly appreciated.

Hi Andie, I think you'll find that Elmlea is quite good ,and the various brands of nata ( cream ) are also , but all are longlife. If you want whipping cream go for one that says "montada",Super Sol do a devon double cream , but again it's longlife, but all the spanish creams are fine. What about trying creme fresh,as you can tell I've never made icecream, I'm lucky ,have acess to Gib once a month, Morrissons is pretty useless compared to when Safeway had it , but it does ( generally ) have fresh cream, even if they rarely have fresh fish.

Hi Andie, you could try to make your own cream if you have a liquidiser. It is very easy and simple. Just add unsalted butter to full fat milk. Let me know if you want the quantities. But as Jackwagstaff said, the long life Spanish creams are OK.

Is Elmlea cream at all?
I thought it was the logical equivalent of margarine and has never been near a cow.
I lived in Spain (Mallorca) for years and they sell President brand cream and Creme Fraiche and I pretty much use the latter for almost every type of cooking (it lasts ages!) but Asturiana is fine and readily available in Mallorca and therefore I assume it's even more readily available in Barcelona just across (well a few hours on the slow ferry) the water.

Lesley, just got your message and I will look for my mum's notes tomorrow and post the recipe tomorrow. It will work with longlife milk, I also live in Spain and made the cream from that milk.

Hi Lesley, here is the recipe for cream. It is translated from Czech language.
1/4 of litre of milk
1/4 of kg of unsalted butter.
Put the ingredients in to the saucepan and warm up milk and butter only till the butter melts. Do not make it too hot. Pour slowly in to a blender and mix for two minutes. (definitely not less than that).
Pour the mixture in a glass jug and leave in a fridge preferably overnight or at least three hours.
Good luck and let me know how you got on. Kamila
