I'm taking part in a cookery competition in a few weeks time (29th June) and I'm planning to do an assiette of chocolate desserts for the dessert. I am thinking about doing a white chocolate cheesecake for one and maybe chocolate brownies (I wanted to do three). Has anyone got any ideas about chilled chocolate desserts I could use?

I'm also thinking about doing some chocolate truffle tartlets (from Gordon Ramsay's Just Desserts) and maybe something with fruit.

I did catch someone a bit ago doing a thing with chocolate that involved dipping a lightly inflated balloon in melted chocolate. You then leave it to set burst the balloon and fill..I think this was filled with mousse, but you could use red fruits, or choc dipped strawberries. it looked really pretty.

Try 350gm dark choc melted then whipped into 300ml ready made (or fresh in your case!!!) custard, then stir into 300ml whipped double cream, then pipe into small pastry cases and top with a single raspberry. refridgerate - did for 100 hungry teachers- went down very well!!! Big Grin

i think i used that quanity for 100, bare in mind that the pastry cases for only about 4cm wide so about a 2 bite dessert. i dont no if that will help you plan for your compition or how many you need to serve, but i use the same amount of mixture to serve 8 people in a raminkin or cocktail glasses with raspberry sauce.
