Please be gentle I’m new to message boards!
Someone I have got to know (through the love of good food from his deli market stall) has recently opened a restaurant/deli which uses and sells only local produce from Derbyshire.
I must recommend the steak, homemade onion chutney and Dovedale blue cheese toasted sandwich it was the best piece of beef I have tasted in a long time.
I thought that it was worth a mention as there are not many places that I know that support local products

I love ostrich, have you tried kangeroo or aligater they are fantastic too. the goat is realy nice, it is the texture of lamb but a bit stronger in taste. How hotyou want it depends on how much seasoning you use.
There are no measurements as my friend does it by feel.
Onions
Black pepper (crushed)
All purpose seasoning
Garlic/Ginger paste
Tin of chopped tomatoes (if wanted)

Season meat with pepper. Seasoning and pastes. Chop onions.
Fry meat first, making sure oil is v. hot. Add onions when meat starts to produce liquid. Add water to suit, bring to the boil then simmer on lowest heat possible. (min of 5 hours) Obviously add extra chillies etc if you want it hotter.
Hope you like it.
