hi i am doing my catering exam in 2 weeks time i am looking for a high skilled recipe for a desert which can be eaten with your fingers what i mean by skilled is things like bain maire etc coukd anyone give me any recipes thanks

I'd have thought that something like eclairs (choux pastry) would be quite high in the skill process - can't think of anything using a bain marie - I thought that was more for things like egg custards ..... unless you use the egg custard to fill your eclairs with. BTW I prefer profiteroles or religieuse to eclairs!!!

Great minds think alike Fudges Mum..I was going to suggest Chocolate Eclairs but little tiny ones with maybe cream and raspberries or strawberries inside. Another one could be mini strawberry shortcakes, done in bite size rounds. Mini fruit tarts too with a creme patissiere filling and a range of fruits on top.
Not much skill in using a Bain Marie really more in making choux pastry.

How about doing a tart au cirton as that includes the use of sweet pastry ( my teacher kept saying how that was a skill that we had to include in our projects) and making a sort of custard filling flavoured with lemon liquear ( lemoncello)? try jamie olivers recipe and add the lemoncello and use his brilliant sweet dough recipe as it's easier than rolling out a whole sheet of pastry and getting cracks! hope this helps!
