can't find rick steins' chinese pork belly recipe

Hi,watched a rick stein programme on uk food in witch he cooked a dish that i want to try at home, but never got the chance to write the recipe down. I have tried everywere to find it with no luck. It was chinese pork belly on a bed of pak choi. I would be very greatful if anyone can help.

hi burnt-bits, i have all of ricks cookery books so will have this recipe. which of his programmes was it? though i think we may have a problem with copyright if i post the recipe here x

thanks missduck the programme was rick stein's food heros. it was shown on wed. 31st may. i'm think once a recipe has been broadcasted it is free to record? but i'm not 100% sure, please do not get into trouble on my account. thank you for your quik response and the time you have spent to help me.

had a look at the link. i will try the crisp pork belly recipe. but will prob buy the book as well. thank you for your help and your time. Big Grin

thanks, bertiee but already tried but could'nt find it there either. I have'nt gave up yet thougth. i'm still open to other sugestions

Hi. There is a recipe for bellypork in one of Delia's books.

Incidently, I fail to see how Chefs can claim copyright for recipes that have been around centuries.In my opinion all they appear to do is add or substract an item

"does the cooking" i agree, also what is the point not being able for you to give me a recipe that has been broadcast on the telly? surely it is on the tv for all to copy at home without paying copyright. during the programme the chefs are always giving tips for you at home!!

thanks for your tip (Delia's book) i'll check it out.

There's a good recipe for crispy belly pork on this site by Ching He-Huang. She has some really nice chinese recipes.

thanks nick, definatly going to try that one, but will just rub the spice mix on the flesh side of the meat leave to marinate and cook in the oven over a try of water to keep the crackling crispy and the meat very moist. i'll make a sauce with the spice mix to pour over steamed pak choi.

i think that will be close to the rick stein recipe i'm looking for Smile

got another problem with the revised recipe, can't remember if i should cook the pork belly hot and fast or low and long when cooking in the oven above water? And how am i going to make a sauce form the spice powder mix? would be very grateful for anyones input.... thanks

I always do belly pork on a low heat.. I add water, soy sauce, rice wine. At end add corn flour to thicken. I have a recipe somewhere but its on a CD disc that I can't find at the moment. Sorry
