Does anyone have a traditional recipe for caribbean fried chicken help please.

Hi yer, well i dont know what part of the caribean your after, but i have been to Barbados for a few years on the trot now and the cook that made our chicken for us, kindly gave me the recipe that she used, all it was, chicken pieces, coated in seasoned in flour, seasoned with paprika, chilli ,chicken seasoning and then deep fried in hot oil till crisp.

Hi Shazza,
Indeed Snoozy is right BUT to make it easier - we tend to part-cook our chicken in Milk with a few pepper corns (put the chicken in, with the pepper corns - to taste) and then bring it ot the boil - all the gunge comes out, the chicken has its first cooking- drain the milk and then roll the chicken in the spices above and fry over medium Fat (we find that vegratble fat gives a crispier texture to meat but this is our own personal opinion)

Nigella does a lovely version of hearttoheart's in nigella bites. it comes out so crispy and is delicious, much nicer than the bought versions!

Hi missduck, Do you know if Nigella's caribbean chicken is on the site or can it only be found in her books? Also what does she call her recipe?
