Hi,

Just got back from holiday in sunny Spain - to awful English weather... Could anyone share with me their healthy Tapas/Spanish recipes to try at home?? Hug

patatas bravas, oven roasted new potatoes, topped with homemade chilli spiked tomatoe sauce.
fresh prawns cooked simply in olive oil, lemon salt and pepper with garlic,marinated anchovies,marinated olives,mussels cooked and topped with cheese and chilli,chicken thighs, boned, cooked in galic , olive oil and lemon ,simple torn lettuce drizzled with olive oil and lemon. just for starters... Wink

serrano ham with fresh figs and some rocket or maybe a drizzle of honey??

some orange red and yellow peppers in long slices with some chopped red chilli and garlic in a fried in a little olive oil untill they go soft

some courgettes thinly sliced into discs, fried in a little oil untill crisp and brown, layered on a plate with some torn mint, a squeeze of lemon and some feta crumbled on top and served either hot or room temp.

Asparagus & Pancetta:

Tightly wrap slices of pancetta around large asparagus spears, season, drizzle with a little lemon juice and grill/bake until the pancetta is cooked

Some of my favourite tapas,as a veggie:
* marinated olives (just buy those pitted olives in a jar *about 80P*,drain,put in a deep bowl,cover with olive oil and add med spices like-small chillies,lemon zest,garlic cloves.let it marinate and get the nice flavours)
* chickpea and roast pepper salad (I use fresh red bellpepper and tinned chickpea,as I'm the only one who eats it)
*Something I had at a restaurant and would like to know how to make-crispy little cauliflower florests served with a lemony dressing.I tried deep frying the cauliflower,but it wasn't as crispy as the one at that place.

I always wondered why no one did this on the "Come Dine With Me" series?

Probably because,as you said,there are so many things you can call "tapas" it can go on forever...
Because everything in your kitchen can be made into "tapas"
