fear ye not P try using strong white flour(as used in breadmaking) + 2-3 teaspoons of baking powder(depending how any u r making or go to Paul Hollwoods website/or recipes for full instructions on here, his are absolutely fantastic Big Grinalso wen brushing tops with milk/eggwash don't let it run down the sides as this stops the rising Wink

I wonder if she is rolling the mixture too thinly? This is a common mistake and results in scones that are biscuit sized. Try patting the mix out, it should be at least 1 1/2 cms before she cuts them.I used to face this problem a lot when making them in school. The children would roll them out too thin hoping to get loads of scones and then be disappointed with the results.

Did you see Saturday Kitchen over the weekend? Mary Berry was on, and she gave out a recipe for scones. I made them that day, and they were fantastic, the best I have ever made! Usually, I have the too thin problem (scone, not weight!), look more like biscuits.

Anyway, I have the recipe written down at home, if anyone wants it.

Thanks for all your replies! I asked the too thin question, Jennifer264,and got "I measured the dough!" Ah-well.
calmac, I think my sil would love to have the recipe, she is determined to get them perfect, although they do taste great even if they are flat.
I will also add the straight up and down hint. (thanks spangled Wink
