Vegetarian menu - i need to avoid the obvious

Morning all and a happy bank holiday weekend to you

need some suggestions, please, for a veggie dinner party - current thoughts are a risotto as main course with a Shallot tarte Tatin to start, but am after some help if anyone has suggestions for anything that is "make ahead" for main course rather than risotto

Any of Celia Brooks Browns recipes are a good bet for a veggie meal. I especially would recommend her Caramelised onion and lentil Wellington ..[link]
And also her oven-roasted hotpot which is gorgeous. Both of these can be made beforehand so makes it easier for you.

I would always recommend a veggie curry and lots of little side dishes to accompany it, they can all be made ahead and heated up on the day.

To save the hassle of a risotto, Delia Smith has a super easy recipe for mushroom risotto cooked in the oven. I like a tower of avocado, tomato and mozzarello slices cooked in the oven till the cheese is melty, served with a simple green salad. You can make this in advance if you squeeze lemon onto the avocado and cover with cling film.

you could do a lemon and herb rissoto stuffed in a pepper half with parmesan on top so it goes all crunchy. this with a simple rocket and spinich salald would be lovely
