Hi, just beat me to the post! I sooooooooooo, wanted to start that very topic myself! There is something special about Silvena, she is truly in her food, I find her easy to digest and as per her food, well, have cooked almost evrything that she does. It is unpretentious and inviting to try at home, I feel as though I can do it and here I must say I am a terrible cook, but learning!!!
Silvena is crazy about telling us and showing us her food, she makes me want to cook, I was so hungry when I watch her tonight, kept my lot waiting for their dinner, worthed!!!Love SIlvenas cooking, makes me feel at ease!!!

cakefasa, Jambalaya is a Cajun dish, originating from Louisiana. It typically contains chicken, Andouille sausage (smoked spicey sausage) and Tasso (a smoked ham), as well as shrimp and various veg (celery, onions, garlic, peppers etc) in a tomato based sauce.

Had to add to previous posts. I love her enthusiasm, her passion, her eastern european-ness (so unpretentious!!)
She's about the only female chef I can watch I find most of the others painful (and I'm a female person!)
Carry on Silvena you're fab Big Grin

Their most likely not her own recipes but "borrowed" from someone else so no copyright ownership so cant be put on here. Most of her recipes arnt her own anyway.

I also looked and can not find a record of the dish that I did on thursady, sorry for that! Hello to everyone, nice to read you all, as though I know you, often want to say hi on TV but never time, so Hi here:

Here is my own unedited copy of the recipe: It is an adapted one from Magnolia Grill in North Carolina but I used to live in the Caribbean and am very fond of that particular dish.

Silvena xxxx

Chicken marinaded in paprika and cayenne, served with prawn jambalaya risotto

4 chicken legs
Marinade:
2tbsp. olive oil
Juice of 1 lemon
½ tsp. cayenne pepper
½ tsp. sweet paprika

Mix the marinade ingredients in a small bowl and brush generously all over the chicken legs, rubbing it in. Leave to marinade for at least 2 hours preferably overnight.
Pre heat oven to 200C.
Roast for 30 minutes and season to taste.

Prawn Jambalaya Risotto

2 tbsp. e.v. olive oil
100g-chorizo sausage cut in small dice
1 medium onion, peeled and finely sliced
1 red pepper cut in small dice
2tbsp.-roasted garlic
200g Arborio rice
1 tsp. sweet paprika
2 medium tomatoes, chopped
150ml white wine
300ml chicken stock
200g raw large prawns, shells removed
100g freshly grated Parmesan

Heat the oil in a large heavy non-stick pan over medium heat. Add onion, sausage, pepper, garlic and cook for just 2-3 minutes until all is lightly coloured. Add rice and cook for further 2 minutes until rice becomes slightly translucent. Add paprika.
Keep stirring and add the tomatoes, wine and stock, but do that gradually, making sure that the liquid added has almost evaporated before you add some more of it. The best way to achieve this to add the liquid gradually and slowly, allowing to absorb between additions. That way the rice will form a creamy texture. Stir in the prawns and continue cooking for just few more minutes, to cook the prawns. Make sure that you still have some liquid left when you are adding the prawns. Keep stirring continually as this will assure the creaminess of the risotto. Sprinkle with Parmesan and serve hot.

Note: The chorizo need to be sausage rather than the salami type, the one that needs to be cooked and is sold raw. Chunky texture.

Hi there me again! Just to clarify that the jambulaia recipe has been inspired by a much longer and rather different recipe from Magnolia Grill. The original recipe consists of 19 ingridients and its made with crawfish. I have simplified it in order to be easy and practical to cook in a home kitchen situation, rather that in a restaurant kitchen. I often take insipration from books, I like books very much and collect cookbooks , have over a 1000 from all over the world and still buying...

Wow thanks Silvena you really are a star lady!! If you do get chance to say hi would love it - my husband would probably faint he has a bit of a crush (he says he's allowed as I have several - on male chefs!!). Would just like to say that I love watching you and thanx for the recipe Big Grin

if recipe was hers and allowed they would have put it up but it isnt hers and breaks copyright and she should be sued

JVM1 -- There is no copyright on recipes!!! How there can be. They all use recipes that they make thier own by adapting to their tastes, you can too do the same!!!

Delish recipe, by the way, Silvena!

If the chef has changed the ingredients then it is a DIFFERENT recipe - even by changing one ingredient!! JVM thats the problem with this flaming country. Everyone wants to sue someone for something. Live and let live!! Confused

Hear, hear Kazwilkie! So well said!!!

Silvena used to have a regular column in the Guardian so surely she should know about copyright anyway, I have been a G. reader ever since I could read and still miss her column, I guess she moved onto TV...
Thanks for supporting my comment Kazwilkie!!!

I just don't like all this negativity - this is a food website not a legal forum (well last time I looked anyway!) Just think there are far worse things going on in the world than someone sharing a recipe. Big Grin

I couldnt agree more, there is a lot of negativity around, just reading other threads too...
You are right Kazwilkie, it ishould be all about good and delicious food, so lets just talk about that. And if we are to get some fun and entertainment with it, like when Silvena cooks, so whats wrong with it, even better, after all thats what the great Gordon R.does, entertain!!!
