My home made pancakes are flavour-less and dry like cardboard! How do I get a lite, soft, fluffy result?
P.S. Love the show, great camera shots!!!

Delia's pancake recipes always work, my failsafe.... if you look in any Delia book you should find a recipes for it, or probably even onthe web.. can't post it due to copyright..... Cheeky

Hi there, if you type pancake into the recipe section here you will find a few recipes, I would also recommend Delia's crepes suzettes, I make them a lot and they are delicious!

My hubby makes really yummy small pancakes (you know, the thick ones - are they called Scotch Pancakes?). He uses 2 eggs, whisks just the egg whites with a pinch of salt, then in another bowl beats the yolks with 4 tbsp caster sugar, then adds 8oz self raising flour and half a pint of milk and mixes it all up, then folds in the egg whites. Dollops a tablespoon at a time into a lightly greased frying pan, and when you see bubbles forming, flip them over. They're really light and taste gorgeous - especially with maple syrup.

BECKY, are you still about

I have just tried your recipe and now have 34 scotch pancakes, they are delicious but I can't eat them all today. what would be the best way to store them, would they freeze ok? I sprinkled some with sultanas. Smile

Hi Essex Girl. I think the pancakes freeze ok, I'm sure I remember my mum freezing them when she used to make them (on the rare occasions there were any left to freeze Wink )

Hi Essex..woohoo..someone tried my recipe - that's a first! Glad they worked..Celtic's right, they freeze really well. The only thing is, they do tend to stick together so its worth putting a sheet of greaseproof paper between each one. Tedious, but worth it. Glad you approve - can't wait to tell hubby!! Becky x

Hiya Mel. Yeah, I think so. The nearest equivalent I've found is in MacDonalds (sorry foodies for mentioning the M word!!). We've had them with bacon and maple syrup and they're really nice, although I wouldn't have thought of putting them together!! Talking of disgusting mixtures - my children have them with peanut butter and jam inside - yuck!!

Over here in Belgium we normally have pancakes with brown sugar and butter, occasionaly with whipped cream on the side aswell..Now i'd love to toss in a recipe but unfortunately mine is in other units of measure then the British one..

Erm ok then lol but first I have to grab the dictionary lol.
You use : 3 dl of milk
2 dl of mineral water (sparkling that is)
2 eggs (three if they're a small size)
250 gram of self-raising flower
about 40 gram of butter (or just a big spoonfull)
60 gram of plain sugar

Pour the milk plus water in a glas bowl, add the butter and sugar, then slighty heaten it up untill the butter melts in the
liquid (you can do that easily in the microwave) Seperate the egg yolks from the eggwhites. Mix the egg yolks with the batter that you've already got and then slowly add the flower.
Now mix the egg-whites onto snow (uh sorry my english is a bit crummy lol) and add that carefully under the batter.
Leave it somewhere to rest for about half an hour to and hour and then it's ready for baking Big Grin
Note : Make sure your plate or frying pan is burning hot..the pancake has to bake immediately..that's the only way to get nice brown and soft pancakes..

Uh me again..Forget to say that if you want slighty thinner pancakes you have to add 6 dl of liquid instead of 5 in total k..
Also don't use oil please to grease the frying pan or plate..I think that gives a nasty taste to the pancakes..please use butter..These pancakes are usally at their best eaten with soft brown sugar or the ordinairy one and butter but the crémé de la crémé is if you also have whipped cream to go with it...And now i'm going to watch the waltons lol.. Big Grin

Aw, hope you're feeling better already Becky Smile Erm it's described that way cos silly me hasn't got enough knowledge of English grammar and vocab to make it sound correctly let alone read out correctly hehehe..I love to hand out recipes but doing that I also notice how poor my English really is and that I training lol..But hey if you try the recipe hope you like them cos like all things they might not be up to your taste and hope you can work the ingredients out (seeing I use gram and so as I'm Belgian)

Evve, I don't think you should change a thing - and your English is fab, I don't think many of us would get very far trying to post in another language - you should be proud! Yep, head is much improved thanks. Will let you know as soon as I make them! Thanks again x

I can assure you that my recipe for pancakes is mine and mine only...I only have it from my mom and I'm not using any translation site..I thought anyone could tell by the mistakes I make..Also Luc Matthijs..your name seems Belgian or Dutch..Well if you are I'm feeling terribly disapointed by the response I'm getting here now...
