Rick Stein Programme Recipe - Monkfish & Scallops

Can anyone help. I would like the recipe for the Irish dish that was on Rick Steins programme about fish in Ireland that included Scallops, Monkfish, and egg glaze and sauce. I was cleaning and wasnt taking all that much notice, but then end result was perfect for what I need for a fish dish. Can anyone help please

Ingredients:

Monkfish
Scallops (with coral)
Cream (wine glass full)
Butter
Shallots
Green seaweed / sea lettuce (available dried from delicatessens)
Coxxxx grained mustard
Eggs

Method

Slice monkfish and scallops thinly and place on lightly buttered baking tray finish with coral in the middle. Bake with moderate heat for 5mins.

Sweat the shallots in butter in a pan and add seaweed (sea lettuce), lemon juice and half a wine glass of white wine. Allow to reduce, then add a wine glass full of cream, pepper - whisk.

Make an egg glaze with egg yolk and water whisked over heat, add coxxxx grained mustard.

Lift fish off baking tray and place on plate, top with egg glaze and place under a grill to brown slightly.

Add sauce around the fish and serve.

Enjoy,

I have no idea why "coxxxx" came out as "coxxxx" in my post above! Eek

Oh yes, there must be a stupid naughty word filter in this board, so it changes the last 4 letters of the word because by themselves they spell a word so wicked you would all of course need to go n say ten hail Marys if you saw it.

The word displayed as "coxxxx" is the opposite of fine and sounds like "course", but is, of course, not spelt that way!

It's from his book of the series. Seafood Lovers Guide.
You may find it on the BBC Site. Due to ,I believe copyright issues, a lot of Sir Rick of Padstows recipes cannot be posted elsewhere. I could not, for instance get my book and copy the recipe on here for you. It would be deleted as infringing Copyright.
It's a great book to have at home or try the Library and just write it down.

Thats a little annoying don't you think, considering it's not even his recipe, it was a nice Irish fisherman he was hanging with if I recall!!!!

Its still a fantastic recipe though, such a simple dish
