Help!!! having a dinner party tomorrow and need a good sauce

Hi..Can anyone please help
I am having a dinner party and I am serving chicken thighs wrapped in bacon stuffed with pistachio nuts and sausage meat..I am serving this with caramalized onions, fondent potatoes and jullienne swede and carrots...but I need a good sauce to serve with this.
After all that hard work plain gravy sounds a bit boring!!
Can any one please help

Hi,
Maybe a nice simple sauce like : deglazing the pan after you have cooked the chicken (with chicken stock - homemade if possible), then adding a bit of cranberry jelly and a shot dry sherry - let it naturaly reduce -if you want you can then add some cremme fraiche/ sour cream just before serving but it is up to you. Iits simple and should not affect the other flavours - you don't want a competition. P.S:Yor meal sounds great!

Hi Graham
You have some good strong flavours in your dish so how about Cumberland Sauce? I make mine with chicken stock so it should save you a little effort. Good luck.

Thanks everyone for your ideas... I used your idea hearttoheart but with out the creme fraishe.. it tasted great
