Help!! I have bough 1.2kg of Ostrich Fillet for Christmas dinner. I have no ideas of cooking times or the nicest way to serve it? I thought about redcurrent or home made cranberry sauce, but I have no idea what the meat tastes like so can not match to a recipe! Any help would be appreciated. Wink

Ostrich is not cooked as long as beef or poultry. Steaks can be marinated in low-sodium soy sauce before grilling. Grill at very high temperature until the outside becomes lightly brown. The inside should be a pink color. Never overdo ostrich as it spoils. Go to google and type in 'ostrich meat recipes' - this should help.

Thanks for the reply however it is 2 pieces of
fillet, one weighing .568g and one at .624g I have. Though about roasting, what do you think????

Most recipes are using slices of fillet. I don't suppose it makes a difference if roasted but as I mentioned, don't overcook! Try going to google and look for recipes. I will see what l can come up with. Watch this space!

As Ostrich is a very lean meat you need to cook it quickly and on high heat - especially the filet. If you try roasting it (especially two small pieces)you run the chance of overcooking it before it has a chance to colour nicely. You could brown it quickly in a pan and then put it in the oven for a few minutes but if ostrich filet is overcooked it turns to shoe leather!! Mosey is right - cook it to pink and as you thought, redcurrant or cranberry sauce goes very well with it.
