Ideas for cold salmon starter anyone?

Hi, We are having beef fillet with a redcurrrant and port sauce for our Christmas lunch this year. There are only 2 of us and I want to do a cold salmon starter (not smoked) Any ideas please would be welcome. Thanks Smile

How about a poached salmon mousse served with cucumber tagliatelle marinated in a light vinegar with finely diced red chilli?

Potted salmon, using hot-smoked salmon with a layer of minted pea puree and toast.
Salmon fillet with potato salad, coleslaw and cherry tomatoes.
Salmon and avocado salad. or chilled soup.
I have used this one recently, it looked and tasted really good. [link]

Asparagus mousse with flakes of salmon stirred through before you leave it to set. Serve with extra asparagus in a lemon oil dressing and lemon wedges.

How about poached salmon with a cucumber sauce? Cucumber, peeled and grated,yoghurt or creme fraishe, crushed garlic, a little dill and lemon juice.

Or maybe a shimp sauce a watercress one, or a mustard and lime one?
