Does anyone have any ideas for wheatfree/dairyfree desserts? I made meringue last time!

If you get rice milk or lactose free milk (available in cardboard cartons) and pudding rice or arborio rice, you can make a lovely baked rice pudding.

Also, you know those bags of frozen fruit you can buy? Well as an expansion on the meringue idea, I sometimes put a bag of 'forest fruits' (defrosted) into a baking dish and cover with a soft meringue mix and bake till the topping is browned but not hard.

Pears poached in red wine and orange juice with a little ginger, are most elegant, beautiful red color, and the ginger gives them a spicy warmth.
Sorbets and Granita's are good, and can also be used in a Peach Melba to replace the ice cream.
Diced mango and kiwi in a lime and ginger syrup with coconut cream is super.
Baked apples, stuffed with mincemeat and soft meringue on top look good.
Bittersweet chocolate, should be dairy free but check, and cinnamon fondue with fresh fruit dippers.
Bittersweet chocolate can also be used to make a dairy free mousse. Melt chocolate with a teap of instant coffee in a tblsp of water, stir in 2 egg yolks and a tsp of rum or brandy, whip the eggwhites and fold in.
Pineapple snow, baked bananas and coconut cream topping. Or icecream made with coconut milk/cream.

Thank you - I think I am going to try a chocolate mousse, but will keep the other ideas for future reference.

I have only recently discovered Nigell Lawson's Clementine Cake. It is light moist and moreish. The only ingredients are ground almonds eggs baking powder and clementines so it is suitable for people who are allergic to gluten( does baking powder have gluten in it? I don't have a sweet tooth and very rarely eat cake but I love this.
