Hi, this is what I remember from the recipe. Two baking potatoes - baked in the oven, let it cool and scoop the flesh in to a bowl. Add two egg yolks, cheddar cheese (not sure how much), season and mix. Whisk two egg whites and mix in to the potato mixture. Put back in the potato skins and bake in the oven. Oh yes, he also sprinkled the top of the mixture with grated parmesan.
I hope that I have remembered it all.
