Could anyone please tell me what cream to use in France which is the equivelant of double cream that's whippable.The creme fraiche fluide will whip if you use lots of sugar.I would like to whip up cream without using sugar.

Very hard to find this in France. I have bought the long life cream in cartons. Choose one with the highest percentage fat content. This will work usually. If you are really lucky, you can find a real dairy/cremerie which will sell you the equivalent of fresh thick cream.

Hi Yianni, A bit late I know. We live in Belgium and we have the same problem. If you can find a cream of over 44% in fat it will whip without sugar.

I have the same problem in Italy, I can only find UHT in cartons, it's a subjct that has been discussed many times on most cooking sites...It's something that's just not used for desserts here & probably in France too.
