I've just returned from a visit to my mother's who lives by the seaside. She gave me six mackerel which she'd frozen within a couple of hours of them being caught and I managed to get them into my freezer before they defrosted!
Any recipe suggestions - I thought of making a pate but the only recipe I've found on this site uses smoked mackerel.

Hi Fudge's Mum - lucky you. If you go into Google and just enter "mackerel recipe" - loads of suggestions come up. Wish I had some mackerel handy myself!!!

Rick Stein does a lovely recipe of mackerel rolled in seasoned oatmeal and fried in butter.

Hi Fudges Mum....I love mackerel (about the only fish that I do)....I always cook it wrapped in foil with some butter and seasoning....cook in the oven....it is so succulent!
Here is a low fat recipe for a Mackerel Dip:
Mix some cooked mackerel with 4oz. of very low fat fromage frais
Place into a food processor with 2 spring onions and process until smooth
Chill and serve with crudites or whatever takes your fancy!

Hi Fudge and everyone, I love Mackerel and I just dip it in flour and shallow fry it for a couple of minutes, then eat it with fresh, crusty bread. mmmm loverly
