i know this is probably been asked before but do you know if you can freeze coconut milk/cream??..never need a full tin in one recipe and i hate to waste it Big Grin Big Grin

I often freeze it and have survived to tell the tale. Is just the same as freezing cow's milk in my non-professional opinion. I use it straight from the freezer -- I suspect most people would say let it thaw in the fridge first.

Have you ever tried it frozen ceiling's nice? Like mini milk lollies but coconut flavour. I wonder if it would be nice on it's own or would maybe need some condensed milk added. What do you think?

No I hadn't thought to try that -- what a good idea. I think adding some condensed milk would make it sweeter, better consistency.
