Hi,
Can anyone help i have some chicken breasts and looking something new to do with them i usually use them in curries or stuff them, anyone have any recipes to do something maybe a little bit different?

Turn breasts over and slice (but not the whole way thru') from the middle to the edges so it makes for a flatter larger piece of meat. Make up a stuffing mixture ie use rice, mushrooms, spices etc etc and spread over the enlarged breast then roll it up and wrap with streaky bacon or pancheta then griddle untill cooked.

Make a tin foil pocket and put whatever you have in the fridge in with the chicken breast (mushroom, peppers, onion, garlic etc). Add a shake of soy sauce or a splash of wine, plenty of salt and pepper - roast at 200 for about 30 minutes.

Simple, moist and delicious.

Make a pocket as above and stuff with goats cheese
Season the breast and place in ovenproof dish. Pour in a little white wine- to about a quarter of the way up the breast.
Cover the dish in foil and cook at 180 C for 30 mins.
Uncover and spread a large spoonful of cranberry sauce (or redcurrant jelly or similar) on each breast.
return to oven uncovered for a further 15 minutes.
