Smile Many thanks to all who replied to my plaintive question on how to store Parmesan. Sorry it's taken me so long to reply, I needed help finding my way back to the replies!!! The freezing is working great!! Thank loads to you all Sandy Norman Hug

I haven't seen the other replies, but I go to Italy every year and come back with at least 4 kilos of parmesan. I either grate it straight away and store it in the freezer so that it is ready whenever I want it, or I keep it in the vaccum pack in which it was bought. It will keep for several months if the seal does not break. What you do not want to do is allow it to become damp as this encourages mould to grow and then it tastes awful. I find that it stores well in a plastic container in the bottom of the fridge.

Hi, I live in Italy & have tons of the stuff in my fridge. After many experiments the best way I've found is to wrap the cheese in baking paper or greaseproof ppaer, then put in a plastic bag, it keeps for moinths like this.

Yes. greaseproof paper is the best. It will stay dry and so better for grating.
