As far as I remember my (french) Grandfather used to lightly fry it and put it on top of Venison or Just have it plain on toasted brioche.

One of the best, in my opinion, is Tournedos Rossini. Ultimate endugence!

Do you have a recipe for it Once is never enough, so i can talk to my customers about it. Foie Gras can be a bit daunting for some folks who havent tried it before.

Hi Relishmama. Foie gras is very popular here in France especially at Christmas. There's some very good recipes on French foodabout.com What about a terrine? Let me know if you want a recipe for it as I have a good one from my French friend's Mum. Smile

Not my own as such, and it is very long to put on here, I am sure you can find it elsewhere but the basis is, fillet steak served on crispy fried bread, topped with slices of foie gras and black truffle then served with a superb port sauce, made from scratch with a veal knuckle, onion, carrot, butter, white wine, stock, tomato paste, bay leaf, bouquet garni and a little flour to thicken, then the port.

Thats a lovely place - good seafood.Have just eaten my Tesco hot X buns from the freezer!! They have been in there a while had almost forgotten them. lol

can we get back to topic please Smile i love the sound of the tournedos so will track down a recipe for it. And I shall have a look at that website snowy cheers love.

There is an excellent recipe for tournedos rossini on here by Ross Burden I have made it a couple of tmes and it tatstes yummy I found it a bit difficult first time round but it's well worth it Smile Smile

relish, i have only ever had foie gras lightly fried with no added fat on toasted brioche, with fig jam/jelly i think the best is to keep it simple
