Confused Please can anyone tell me where I can buy curry mayonnaise, Heinz used to produce one but as far as I am aware this has been discontinued, Tescos also used to sell Tikka mayonnaise (can't remember manufacturer) this has also been discontinued, or has anyone got a recipe?
AWT has recipe for coronation chicken but this is a hot dish to serve with rice etc.(not what I want)

Hi Yvonne,

You can add one of the big name mild curry pastes like Pataks or Sharwoods to shop bought mayo and you will have curried mayonnaise. Add a teaspoon at a time until you are happy with the taste.

I used to do that until I read the small print on the side of the jar.It says "it is important not to consume the contents of jar uncooked."But I'm still here, but I wouldn't do it again, you never know. Smile

Well I've done it that way loads of times but can't blame you for being caution Essex Girl.

The problem with using curry powder besides Guths valuable point is, that you get a raw powder taste. A bit like when you thicken a sauce with flour and don't cook it out.

Sorry Guth, I hadn't realised that the paste wasn't being used for the uncooked reason as I personally don't find it has a raw taste as the powder does. I thought the paste wasn't used due to some sort of bacteria etc. You know, when it says about refrigerate once opened etc. I hadn't meant to correct anyone.

I'm with you now, doh Big Grin

Yvonne, here is my recipe from the 70s. Used to make it when it was called cold curried chicken Smile
Ingredients
Any amount of cold cooked chicken, or about 2 chicken breasts.
1 onion
1-2 tspns curry powder
1-2 tablspns chutney
1 tblspn oil
1/2 small jar Mayonnaise, I always use Hellmans. (usually light now)
1/4-1/2 pint single cream or soured cream or creme fraiche.*(each of these will give a different tase)
To garnish some halved green grapes, or toasted almonds, or chopped herbs of choice.
Method.
1. finely chop onion.Gently fry in oil till transparent.
2. Add curry powder cook gently about 1 min.
3. Add chutney, (not Branston) a mango chutney is good.Leave mix to cool.
4. Stir in Mayo, cream of choice, chicken, season to taste.
Serve with rice salad or a crisp green salad or both. Garnish with your grapes or almonds or whaatever you choose.
Hope this helps. I used to make this in the days before everyone started making it, but have still kept to the recipe actually. Use more herbs now, we didn't then, and use light mayo now, we didn't then.I don't use chicken now either, we've been veggie for 25 years so use Quorn now.
Ah well times change.
