My mum is coming for dinner on Mothers day, and I want to cook her something really special as she helps me so much looking after my children, I really want to spoil her.

YOU CAN TRY GOING ONTO GOOGLE AND TYPING RECIPES FOR MOTHERS DAY THEY WILL SHOW YOU ALL SITES TO LOOK INTO I TRIED IT THE OTHER DAY AND FOUND A PERFECT ONE FOR MY MUM WHOS ALSO COMING FOR THE DAY TO BE SPOILT ROTTEN BY MY CHILDREN AND I FOR BEING PERFECT Big Grin

Depends what your mum is in to - fish, meat, whatever! Gives us some guidelines and I am sure you will get some great ideas!!

Easy way to make the rolls.Lay a piece of ham on a board dot over a good melting cheese add your fav' herb and black pepper freshly ground.Flatten out chick' breast lay on top of cheese/ham and roll up.Secure with cocktail stick.Pan fry,grill or oven bake .When cooked pour over a nice sauce.Another way ,make a pocket in chicken breasts stuff with again a good melting cheese and crispy bacon add thyme and black pepper,wrap the whole breast in parma ham,secure again and oven bake untill cooked.Again serve with a nice sauce poured over.

Buy an good size Chicken Breast and cut in half.
This is my recipe ok.

Put each half in a plastci bag and pound till very thin.
set aside.

In a bowl put some Chicken or pork mince or half of each.
Add salt, pepper, sage, garlic powder or your own herbs to taste. Also lots of chopped Parsley.

add a small bit of Blue cheese
some pieces of walnuts not to big or grounded
add an egg to bind.

Stuff the chicken breasts and roll

fry folded side down so no need to tie or use toothpicks.
Let brown nicely.

remove and let rest.

In the same pan add some chopped onions and saute,
Add a cup or so of marsala or red wine and let the alcohol burn. Add the chicken rolls and let simmer for half hour or so. Eventually the sauce will dry up when the rolls are done, but let dry too much.

The rest is up to your imagination. I normally make a real Mushroom sauce, Mashed potatoes and veggies...

Sounds lovely Boneyapper, if my daughter wasn't a veggie I would get her to make that for me on Mothering Sunday. But I think she and I will have Celia Brooks Brown's Roasted Veg Hotpot again, we love it, and I would recommend it to anyone.

Of course it would work as a wonderful side dish as well, so would go with any meat dish.

Did you ever try a Veggie Lasagna? Instead of using pasta, cut up Zuccihini in long strips and boil when almost tender set aside. Make the usual sauce. and do layers of sauce and Zucchini. Being a Vegan she can use maybe Soya milk with a litle flour to thicken as a white sauce.

No Adrian, she isn't vegan just veggie, and will even eat the odd prawn or a little fish now and again, she loves pasta and does lots of it. But again, your idea sounds very nice and will suggest it.
We do love courgettes, used to grow them in the garden. And one of our favourites is "courgette mousaka" which to be honest is nothing like a mousaka, but very very yummy.

Courgettes are very versatile. When cut in long strips and boiled till almost tender you can roll them around cut pieces of your fqavourite sausage and stew them. Must use a tooth pick not to open up.
