Turkey Wishbone

On Moday's programme Brian Turner roasted hie turkey after having taken the wishbone out, however, he didn't explain how to do this. Is it easy to do?

Locate the wishbone in the neck cavity using your fingers. With a small knife, scrape the meat away from the 'wings' of the wishbone, give it a twist and it will pop out.

That's how he did it Martino cos. I saw it....but I didn't know until then.Mind you,I always keep mine in until after cooking.

Goldie, if you take the wishbone out before stuffing the turkey, it makes carving so much easier.It means you get slices of breast meat with stuffing very easily.

On this same program, he claims that the turkey (a 15lb er) will cook in under 2 hours. The recipe posted seems to suggest that it should take 5 Hours - twice on the recipe page, it says 20 mins per pound 20 mins. I have to admit to being a little confused. - Which is right?

Thanks Blondie, but this does not really answer my question. 5 hours is too long, (why though does the recipe page say 20 mins/lb 20 mins) - Is 2 hours enough as suggested on the original program? Confused

I am not sure about this but think it is the difference between roasting the "normal" way, or the "quick" way.

Brian did say that the normal way is 20 min per lb plus 20 mins, but I would agree with Blondie, that is too long. I would have said for a bird that size, 15 mins per lb plus 15-20 mins is enough.

However, to cook the bird within 2 hours you need to use Brian's quick method, starting it on one side for 30 mins, then then turning on the other side for 30 mins, and finally on it's back for 30 mins, test to see if the juices run clear.

Also the recipe says 200C/gas mark 6 which is hotter than the "normal" 180C/gas mark 4. Maybe GFL could make this clearer.

No Blondie, Larss wants clarification of Brian Turner's way(s) of cooking a turkey. Watching the video and listening again to what Brian said may help, as the way the recipe is worded does make it all very confusing.
