Desperately seeking Panettone recipie!!!

Try as I might I just cannot find a decent recipie for Panettone! I really want to make one but the recipies I've tried so far seem only capable of producing bog-standard fruit cake, nothing like the light briochey style loaf that is the genuine article. Any help would be MUCH appreciated!

Hi zotica, if you type panettone in the search bar above and select chat you will see all the previous discussions on this, and I am sure Martino will give us his genuine Italian recipe on his return. Smile

not a reply but a question help how do you make an orange sauce to go with duck pattie also a cranberry one nice and simple please

Not sure bout the orange sauce, you could experiment with the cranberries, my guess would be to heat them in a large pan with some sugar and keep tasting and adding more sugar or more fuit until it looks and tastes right? Delia is probably the best sauce (pun) for cranberry info ([link]

Hi!

Best suggestion is buy in Tescos they have loads of them for sale why make it? Didn't find any with C pods in though!!!!

Rather than Tesco's try LIDDLES the store that dont diddle, saw another cookie with a trolly full, was xmas box4some lucky customers..

Hi and Aldi have at least 4 different ones to all italian made and not too pricey. Otherwise a few companies are doing mail order if your quick like Savoria based in Tower Bridge London an Italian Deli and montes also in london just google for them
happy christmas.

nice to know we're still talking Panettone.

Martino, thanks for your advice. My wife used cinnamon instead of the dreaded c pods. She found the recipe in the booklet we had with the bread maker. Er, it turned out as a cake, more like a fruit loaf, not the expected panettone.

Quite right, Tesco sell plenty and the Lidl one is £2.99, cheaper than chips!! But are we not Uktvfood? Surely we should all attempt at making the real thing? If it comes out wrong, who cares, we should at least try once.

After Christmas my father is going to show me how to make fresh pasta. He's Italian so I'm looking forward to that.

Yesterday, I visited my nurse at the diabetic clinic, and had a good result regarding my blood test. So life is still worth living. Anyway cooking means doing away with processed foods, so I can have treats now and then. Recently bought Jamie Oliver's new book. It looks very good and easy enough for me to do. So you may all hear more of me in the coming new year. We're all here to help each other after all. Merry Christmas everyone, it's Jesus Birthday!

Does the wonderful panettone recipe vary by region? some using different spices to others I think. Always better to make you own Francesco especially with your diet restrictions. Cheap shop bought one packed full of additives are not what you want at all and yes we are uktvfood and should all at least attempt and not dissuade

I think I did one last year, but it can be difficult to make. EASIEST way is to make a light brioche with good butter and add ingredients, fruit, vanilla, sultanas etc. If you want to go down the trad route then be aware that sour will have to be used for a great flavour...Happy Christmas Paul

Over in Italy the shelves are lined with pat and tony's (as my daughter calls them!)at Christmas time. Also you will find many types of pandoro which is usually made without the dried fruit. They do vary from region to region and shop to shop. I think they come from Milan hundreds of years ago and spread to all of Italy. The "original" would have; fresh yeast, sugar, warm milk, egg yolks, zest of lemon, salt, flour, candied lemon, butter, sultanas, raisins, currants and vanilla in them. The secret is making the "cake" light. They are fun to make and you should use what you want and what you like in them. But if you use a bread maker there are some things to be careful with. I made one yesterday in a bread maker to see.

Because the dough can be quite rich it may need more rising time so after the dough cycle has finished turn off the machine and let it rest for another half hour. I suspect this may have been the problem.

cinnamon works well with dried fruits but be careful not to use a lot of it!! Try adding Italian coffee cold to the liquid mix say two tablespoons and dont forget to remove two tablespoons of the water. Add a tablespoon of cocoa powder to help with the colouring and if you want to go "mocha" add 100 to 200 g of plain chocolate. Always remembering to balance the dry and wet ingredients.

I am really not sure from an Italian point of view that spices are so very used in this but if it is what you want go for it.

At the end of the day there is no one recipe now for this bread but what does remain is that it is lighter than light.

I did actually buy one anyway as a stand-by!! Sainsburys do the fuity one as well as a huge plain lemon one by the way.

Cool was looking at brioche recipies as a way of getting the dough right.

Oh by the way I seriously recomend a drink called Aurum. It's Italian, sweet and orangy, like Cointreaux, but is a lot nicer!!! There's an italian deli in London I know sells it. Is also opposite an amazing Italian restaurant. But I can't remember the names of either. There is also a pub just up the road which sells a large array of Belgian beers!! Unfortunatley it is a choice between one or the other as Italian food and Belgian beer don't really mix!! Blurgh
