Fresh Pasta

Hi there
Im doing a pasta bake for supper tonight using fresh pasta. I usually used dried for this recipe. Could Is use the fresh pasta without precooking first and put it as it comes in the oven??

Hi LyndaW, On the assumption that you have fresh pasta shapes which are from a shop, I would put them into boiling water for 3 minutes and then drain and stop the cooking by placing into cold water. Drain well and use as your recipe requires. If this is pasta sheets, as in a lasagne, remove excess water from the sheets between two cloths before use. This process is called 'plotting' by the way. Thanks for the tip Chef de Maison - the pasta is penne & I was afraid of it being overcooked but your tip should do the trick LyndaW
