low carb cheese sauce: HELP!

does anyone have a recipie for a thick cheese sauce without flour or corn flour? i am on low carb diet and they keep splitting. help please!!

I don't know what you would like to use the sauce for, but I use either cream cheese or cheese triangles and melt them in some milk. To add some extra flavour I put in some Parmesan. Works very nicely with pasta. There is also a recipe on this website for a "better for you" carbonara. Don't know if this helps you.

i make a cheese sauce that uses alot of double cream and fingers crossed as yet hasnt split and goes doewn a treat....

large tub of double cream
medium wedge of brie skin removed,
gouda, skin removed .
fresh parmasan,
white pepper,
i cant spell that gouda cheese but you'll know what im on about
put the cream in a pan, add the cheese chopped as well as some freshly grated parmasan then add as much or as little white pepper as you wish,
try it its divine

That sounds nice spammy, but gcalmske, a teaspoon of dijon mustard and a grating of fresh nutmeg will transform any sauce dish.
