Hi Jeni and team,
I have grown beetroot for the first time and have had a lot of success, i.e. I have loads of them in the garden. Whta can I do with them? I have pickled them, made a beetroot relish. Going to try David Masseys beetroot pesto, any other ideas please. Love the new format show, very amusing and informative. Were Simon Rimmer nd Danny Mills separated at birth? (Simon's much better looking!)

Smile Hi,beetroot is nice roasted (drizzle with olive oil). Or once roasted, add to risotto.

There are three beetroot cake recipes on this site you might want to look at if you fancy something sweet as opposed to completely savoury.

Don't forget, the beetroot greens are a tasty veg to have with dinner.

and it can also be frozen, whole or sliced. The small one's are best. Cook in boiling water, till tender, allow to cool, take the skin off, pack in poly babs or slice into a rigid container. Smile

I love boiled beetroot mixed with pasta,sweetcorn,tuna and mayonnaise.It makes an ideal alternative to a packed lunch for work.

Smile another nice way to do beetroot is once you have boiled it and peeled it, chop it up into cube size pieces, pop into a jar and then make up a blackcurrant/blackcherry jelly, sweeten to taste the pour over the beetroot, let cool and set then use like a relish, lovely with all meats and cheesy things..

Big Grin hi, yeh! i too like to have my beetroot in a jelly, especially if you sweeten it mmmm.........i must go cook some now.
