Last week a chef in a large kitchen and I think foreign made backlava and cream/custard with filo pastry in large trays, I cannot find them on the web site, please help. Thank you.

Hi Thel, I think you might have been watching Galley Slaves. The 'foreign' chef was Greek which is where it is filmed. The series repeats fairly often.

If you click on recipes in the left hand corner, then select galley slaves, the recipe for greek vanilla cream pie is the first one, but the backlava one isn't there. I think you will find this recipe in any Greek cookery book. I have one that I bought in Rhodes and that recipe is in it, but I have not got round to making it yet. Hope you find what you're looking for.
