Quick & Healthy Salads?

Hello all, my husband has just started police training and so is away during the week. On his return he loves nothing more than comfort food and stodge (as do I) but I also need to lose a few pounds so I was wondering if anyone had any enticing salad receipes which are quick, easy and tasty (lack of motivation when cooking for one)?

mc donalds go-active range salads, they give you a free stepometer with that as well, (available in ceaser or ranch styles)

I did 14,200 steps on my stepometer yesterday. Mine was free from the 02 shop. I wonder how many steps others do each day. Do you have one DeLeeder?

Oh Gaye,

You are good! You sound like you've done a mini marathon. SmileI bought one a year ago and I only ever average 7,000. You are supposed to aim for 10,000 so I do seem to be quite behind.

I loathe lettuce, which kind of makes Salads something I avoid, but I have adapted (like a borg)

My current favourite is :

1.5 inches of chorizo from the deli counter of any supermarket
A small shallot

Chop the chorizo into small squares and pop into a fying pan ... You don't neet to add oil, it will come out the the chorizo

Finely chop the shallot and add to the pan stiring until the onion has softened and the chorizo has crisped up

Meanwhile prepare the leaves ...

Baby Spinach Leaves
Rocket leaves
Watercress leaves (the big ones not the little ones)
parsley
corriander
basil
chives

Just chop as much of the herbs as you like onto the mixed leaves, pur over the chorizo and onion mixture and a squeeze of lemon if you want it.

Like TracyLouise we also use a mixture of spinach, rocket and watercress to 'bulk' out the salad (plus any bits of herbs hanging around that fit).

Then our faves are (as you will see variations on a theme but all delicious and including much under-rated fruit in salads):

Grilled Chicken Breast, Grilled Bacon, Toasted Pine Nuts, Orange, White grapes all chopped into little pieces with a couple of tablespoons of Caesar.

Grilled Chicken Breast, Grilled Bacon, Toasted Walnuts, Crumbled Blue Cheese, Red grapes all chopped with a couple of tablespoons of dressing (honey, mustard, olive oil).

Grilled Chicken Breast, Grilled Bacon, Pistachios, Avocado, Large Tomatoes and Apple with a couple of tablespoons of dressing.

There is a book called Salad! that I have just ordered from Amazon that looks quite interesting.

Also as before but I like fish so add different types of smoked fish i.e. salmon, mackerel, all cut into bite size pieces. Topped off with toasted pumkin/caraway seeds. Drizzle with lemon flavoured oil and eat.

Hi Lins, I had no instructions with my stepometer I am so glad I am doing enough. Just to walk round a nearby lake with dog is 3,200 steps. If wearing a dress is it best to attach to bra or knickers please? I am not sure is works on your bra you see.

Talk about a marathon my No 1 daughter walked from Carlisle to Newcastle over the bank holiday!! She has had a pedicure but her feet are in a bad way and she has a very very special party to go to tonight. Gosh, wonder how many steps her walk was!!

Thanks for the suggestions everyone. I go to the gym 4 times a week so no real need for a stepometer as I reckon I do enough exercise, just need to stop eating pot noodles and bags of crisps when I get home!
Wino, I love the idea of the nut and fruit combinations in the salad, sometimes make myself a very basic rocket, pine nut and parmasan salad with balsamic but it's more of a starter than dinner.

If you can eat it raw or cold then why can't it go in a salad, you will be surprised at what turns out to be a nice combination and it's always an adventure cos sometimes it just tastes Blurgh
