I am about to have a glut of apples and I am looking for a ultimate apple pie recipe. Current favourite involves marinading the apples overnight in calvados. Any suggestions?

Sounds wonderful Helen, are you looking to freeze the pies after making?

yes. get yourself some rose petal paste (or process edible rose petals (rosa rugosa) with caster sugar)and add a coule of spoons of it to the apples.

a really amazing combination with apples - crumble, cake etc etc.

these roses are all around the place when you know what you are looking for.

all that hassel for an apple pie! if there is not a Mcdonalds nearby most fried chicken shops sell apple pies too, they in some cases taste even better- nowadays they even use a different batch of oil to fry them in than the chicken and french fries. Big Grin

Erm, DeLeeder, are you the person that has previously posted about getting the gorgeous Nigella Lawson 'banned' for making food you thought was bad for us? And there was me thinking that bad for us meant being full of additives, fats, colourings, sugar, sweetners, etc., just like super noodles, shop bought mash, apple pies and chicken from fast food joints..... Cheeky

yes thats me, but never said that chicken from fast food joints is good, but yes i have promoted the others, super noodles are 170cals per pack, smash is low in fat, and apple pies from maccies or chicken shops are just a reccomendation to someone i dont eat them myself Develish

super noodles may only be 170cals per pack, but what about the additives? And what nutritional value do they have?

Sorry, you and I will have to agree to disagree when it comes to this particular 'food' (using the term loosely).

DeLeeder, dear, your posts, which have been most helpful otherwise, don't deal with Helen's problem: she has a glut of apples and wants some recipe suggestions as to how to use them.

McD's might indeed have wonderfully delicious apple pies, but whether they do or don't doesn't really help Helen very much, now does it? Wink

deleeder, yes it may be a lot of trouble, but have you ever had apple and rose petal pie????
- it is worth it.

helen - how about adding blackberries to your apple pie? they are in season at the moment.

hi helen.my mum always made great apple pies this is the way she did them(i think).
1.peel & core your apples.
2.cut apples into chunks and place in a saucepan with just enough water to cover the bottom.
3.put on a slow simmer and add sugar(ordinary granulated will do)to taste,i think she used to put about 1-2 table spoons in.
4.simmer the apples until they are starting to break down to a pulp(keep tasting to see if you have the sweetness you require)
5.take off the heat and leave to cool.
6.whilest the apples are cooling off make your pastry either normal shortcrust or sweet shortcrust depending on which you prefer,or you can just use shop brought.
7.roll out your pastry (keep half for the lid)and cover a deep plate, yes she used a plate!
8.put onto the pastry your cooled apple mixture and wet the edge of your pastry and cover with the other half of your pastry.
9.press together the base and lid and knock up the edges, then go around the edge pressing down your thumb and fluting up the edges.
10.add a nice leaf design on top with the off cuts then brush over with beaten egg or milk to glace and sprinkle over some caster sugar then bake in the oven gas mk 6 for about 30-40 mins(keep checking to see if it's browned/cooked)
11leave to cool slightly then enjoy!

you can do the same with the apples for the first part of the cooking but add some blackberries, place in a dish and add some crumble mixture on top!delish.it's just my preferance to have the apples cooked first in pies etc but some people put there's in raw, try it anyway and see if you like it!good look jane.x
