excess chillis

I have a Chilli plant that is going to produce dozens & dozens of chillis - far more than i will ever use - does anyone know whether I can freeze them? pickle them? any other ideas? thanks

Well, apart from saying 'lucky you and can you bung some this way!', you can most definitely freeze them. I always freeze my chillies and chop them when they are still frozen. They thaw so quickly that you can take them out as and when you need them.

u can freeze as Georgie says, u can string em up and dry them out, and u can pickle them..

Chop them up and cover in olive oil and leave for a few weeks, makes really hot oil to be used for as you like.

and oh yes ,makes the most sumptuous oil, recipe from portugal, i make it up for my friends, chopped garlic, dry chilli, is best, eggcupful of whiskey, top up with olive oil, watch the colour change over the weeks.. great for basting, marinating, salads with a kick, the redder the oil gets the more potent!! yum yum!!!

Drying would be my preferred method; then keep in akilner jar out of light and away from heat to retain flavour

what about making a chilli jam or sweet chilli dips whcih can be stored for a period or make really great gifts for friends and family.

hi, another idea would be to put a few whole chilli's into a bottle of vodka for a few weeks.... Cheeky

could also make chinese chili sauce normally served with chinese steeped chicken. Chop about 5 or even more chilies, 1 clove garlic peeled and about a thumb size of ginger, liquidise it until smooth, adding some vinegar to help it along. When done, stored in a jar with more rice vinegar. Or just use water so that you could use it to marinate any chicken or meat for BBQ or even make a chili/ curry dish.

Hi, you could make some really great christmas pressies with them. if you dry them whole and tie them together with a rustic bow, add some dried herbs such as Rosemary and Thyme perfect dried kitchen bouquet that people can actually use. Or use the oil recipes and chilli jam and stick em in a hamper. All would be ready intime for xmas and your friends will be chuffed to bits if they love cooking as much as you. Tongue
