when my husband and i where at infant/junior school(not so long ago,circa 1970's)we both had a love of chocolate sponge pudding with mint custard.Ive tried to recreate this custard with peppermint essence & green food colouring but it doesn't taste anything like at school.Do any of you you remember ever having this pud or have ideas on how to do it?i know you can buy the flavoured custards but i've never come across green peppermint custar!any ideas chaps?

Do a google search. Go to the third one down - Mango trifle with fresh Mint Custard. The custard is flavoured with Creme de Menthe and chopped mint leaves.
I don't think the one you had at school would have had Creme de Menthe.

I did a search on Ask Jeeves. There was a site for a school in Oldham which had mint custard on the menu. Maybe you could phone them and ask for the recipe.

Ooh, yes! I was at primary school in the eighties and I remember having this. It was my favourite school pudding. I haven't had it since though, or seen a recipe. Could be interesting if someone does have a good one. I think I'd make it from cornflour-based sweet white sauce with mint essence and green colouring, rather than with custard powder which already has vanilla flavouring in it.

maybe a call to your own school would help, they might even still make it!

My favourite was the gingerbread sponge with caramel custard. It seems so long ago!!

Cor-Ive just had a major flash back!!!! I turned 30 on sunday too!!!i I remember it and loved it but alas no recipe.
Hated the school mince though.....
