To make a lovely long and refreshing drink out of Baileys; pour a large slug over lots of ice then top up with a good quality sparkling mineral water. Stir gently (so as not to split) and drink. Slips down very easily and makes a lovely long cold drink of it.

I 'invented' this while working for the man who commissioned Bailey's to be made some 20 plus years ago. It was marketed in the US I believe (where they love ice) - but not here in Europe!

Great one for the summer.

Another good Baileys drink which I always do when I have friends round is to blend 200ml Baileys with 100ml strong cold coffee or cocoa (not drinking choc) and 4-6 scoops of vanilla ice cream in an electric blender. Pour it into two large or four small glasses over ice and enjoy a moment in paradise!

red rose, yours is bit like an 'adult' mikshake!

Smed, the drink you invented sounds a little like the drink called a Sombrero, although the ingredients are admittedly different

Sombrero:
Tia Maria (hence the name of the drink)
heavy cream
sparkling water
ice

fill rocks glass with ice, pour Tia Maria over ice to half fill glass, float a layer of heavy cream on top to just below rim. With a drinks shaker, shake ingredients till frothy, pour back into glass. Top with a splash of sparkling water.
Yum! liquid dessert

My favourite one is equal measures of bailey's, tia maria and cream over ice-the pubs call it an Orgasm...
Or just serve bailey's over lots of crushed ice-bliss in a glass!!!!!!!

Mammachef makes a mean Bailey's Creme Brulee - it is absolutely gorgeous!

Mmmmm Baileys! If you like Bailey's then try Sheridans, YUMMY!
A good "shot" with Baileys is a B52, Which is (in a small shot glass), Kahlua, Tia Maria & Baileys in 3 layers, then down it in one - BEEAUTIFUL! (My old local wine bar charged £5 a shot - not cheap, but VVVV nice). Cheeky
