Can anyone tell me what type of fish is best for fish curry? Is it best to stick to one type or is it OK to add different ones? And if I want to add prawns, do they need to be raw? Thanks!

Hi Peppercorn,

On the whole a firm flesh fish is best; it is ok to use different types, but you may need to add them to the pot at different times as some take longer to cook that others. To avoid this try and have all the fish pieces the same size and thickness.
Yes it is best to use raw prawns, as they will take on more flavour and not over cook.

I know its a bit late in the day to reply to your question but ive used monk fish as its very firm and meaty you have to watch it with the prawns as they can over cook in a second personally id use the monk fish..
