since my husband has took up fishing i have a freezer stocked up with trout.Can anyone give me any recipes to do with cooking trout and any different flavours to add.

Their are so many different ways with trout. Do you like it steamed, baked and stuffed , grilled , pan fried? and what flavours do you like? With this information from you will be able to come up with something really yummy for you to try.

my dad fishes for trout, so i know what you mean! try some rosti fish cakes - usually done with salmon or crab, just substitute them for the trout. Delia has some good recipies.
Also bbq'd is nice, fill the cavity with lemon and rosemary, and wrap in til foil and bbq for as long as it takes for the flesh to turn opaque.
If you have a smkoery near you take them along to get done - hot smkoed is becoming popular now as well. My dad also got friendly with the local fish monger and exchanges the trout for other fish. Also works well if you have pals that hunt, or have small holdings.

There is 3 ways I do my fish,

In batter and deepfried
Or skin dipped in a flour salt and white pepper mixture and pan fried in a little oil
And my favourite (and healthy), create a tinfoil envelope and add fish, (only use fresh ingredients, never powdered) thinly chop, ginger, garlic, spring onion, soy sauce, tiny bit of suger and a dash of water, seal up the envelope and steam for around 20 minutes, remove fish and cover with the garlic, ginger, soy sauce and spring onion mixture on top, serve with boiled rice and pak choi or broccoli, spinach works too.

I do that chinese way with sea bass brucelee. It's so delicious.
