pumpkin seeds

Hello, anyone got any interesting recipes using pumpkin seeds. I got them from a health food shop and still in the bag unused. didnt like then dry fried with sugar and spices so what do you think?

Well when I 'did' a pumpkin a couple of years ago at halloween when I had kids visiting I couldn't bear to throw those seeds away (there were hundreds of them!) ... so I washed them and dry roasted them in the bottom oven of the aga for hours (in a single layer, well as near as possible to a single layer) and then just sprinkled them with salt. They disappeared in minutes, everyone loved them!

They are delicious brucelee - I toss them in to salads to add crunch. They are very good for you too apparently! Just looked them up and they contain protein, fibre, iron, calcium, potassium, zinc, well the list seems endless. I must add that the seeds are roasted first.

Pumpkins have been cultivated for a long time in Central America, this is a 'pepian' or pumpkin seed thickened stew which I did in Capetown recently. It is originally with green tomatoes or tomatillas and quail or pheasant. The ancho chillies are important for richeness and can be bought from the Cool Chile Company on line or from Sainsburys

Linefish in pumpkin seed sauce
Serves 6
Although escabeche and seviche are definitive Mexican fish dishes, this dish takes the country to the sea. A similar sauce can be used for quail or pheasant.

6 ancho chillies
6x150g raw, pieces of linefish, the thicker the better
145g toasted pumpkin seeds
1 large onion, finely chopped
3 cloves garlic, do.
450g tomatoes, peeled and chopped
pinch allspice
1 chicken stock cube

to serve
coriander or chopped oregano leaves and toasted pinenuts

Gently toast the ancho chillies, destem and shake out the seeds. Cover in warm water and allow to soak for 20 minutes. Toast and then grind the seeds to a powder. Blend the onions, garlic, tomatoes together. Stir in the powdered seeds and then bring to a simmer. Season with black pepper and the stock cube. Cook til thickened, around 15 minutes. Gently place the fish in the pan and spoon over the sauce. Poach til cooked, about 6 minutes. Scatter with the herbs and pinenuts.

Enjoy it, I'm off to the south of France tomorrow for a week - hurrah!!

I use them with sunflower seeds, sesame seeds, walnut pieces, desicated coconut, raisins, apricots chopped finely, rolled oats, demerara, honey and unsalted butter to make energy bars. I do not have a recipe but use about 2oz each of the seeds,
4oz of the walnuts, raisins and coconut. Then I melt the honey and better and combine it with rolled oats (about 12oz) and a couple of tsp of cinnamon and bake for 20 mins.

They are delicious and cost a fraction of the ones ready made.

Hi, good recipe for pumpkin seeds is
Watermelon, feta cheese salad.
chunks of watermelon
crumbled feta cheese
finely sliced red onion
drizzle with olive oil and lemon juice and top with roasted pumpkin seeds

made this from a book but can't remember which one at moment.. sorry - anyway it is delicious

I just love them sprinkled on bread before its baked. We do it at the restaurant. Mostly, we use a mixture of pumpkin seeds, melon seeds, pine nuts and sun flower seeds. Yummy.

Pumpkin seeds are delicious put into bread dough,they add another texture as well as being good for you---enjoy

hi thats what im doing this very minute. its actually raisin and pumpkin seed wholemeal bread with honey and cinnamon. I hope it tastes as good as it smells. will let you know later when its cooked. cheers all.

Kimi, errm could be tricky cos its in the dough pet.
But its only a tincy wincy bit. Normally wholemeal asks for dark treacle or molasses but as I didnt have either and wanted something lighter I went for honey. I also replaced one of the cups of flour with strong white just to help it up a bit. It smells devine. shouldnt be long now.

Pan roasted in a little oil, sprinkle with salt and mild spices, mild chilli powder ect, pop into a dish and give them to mummy's and daddy's and 4 year old's whilst watching tv to nibble on instead of choc's (not our babies though) lovely and healthy!
