Does anyone know how to convert American cups into Imperial (or metric at a push), and if not, how does one measure a cup of butter - do you soften it first or pack it down in the cup?

do you have cup measures? If so just press the soft butter down into the cup

Cup measure recipes are effectively proportional i.e. 2 parts sugar to 1 part eggs to 2 parts flour etc... I did buy a cup measure a few years ago thought that was 250 ml, if that is a help.

At the risk of repeating myself, easier to buy a cheap set of cups ,then you have them for life.

Hi Annev -

1 cup liquid = scant half pint
1 cup sugar = 7 and a half ozs
1 cup icing sugar = 4 and a half ozs
1 cup brown sugar firmly packed = 8ozs
1 cup flour = 4 ozs
1 cup butter, marg. lard = 8 ozs
1 cup grated cheese = 8 ozs

I found this info in one of my cookery books. Hope this is helpful to you.

Annev, most measuring jugs here have cup measures on their calibrations too.
