I have been microwaving my veggies for a while now, because I thought it was better than boiling them (ie. to keep nutrients in). However my boyfriend tells me that the microwaves actually burst the cells in the veg, and it is therefore not keeping any nutrients in at all! Does anyone know if there is truth in this?

I microwave all my vegetables in a special microwave steamer, they keep in all the goodness and cook really quickly. I think your boyfriend is wrong.

I do remember a news item not so long ago that said microwaving veg destroyed a lot of the goodness. I thought at the time 'Oh, not another blooming food scare' but on looking further at the news story there was an element of truth - but only an element.

So microwaving is not bad for vegetables as long as they are not being cooked in too much water for too long.
