vegan for dinner!!!

hi, i have a vegan for dinner at work friday , and 2 days next week. got told 20mins b 4 she arrived today so just threw some button mush together with olive oil, herbs and loads garlic, in oven, looked nice, so now i need 3 more tasty, very easy to put together recipes for 1. as i have to cook for 20 others at the same time, all of whom eat anything. kimi. xx

Veg lasagne
pasta beans and potato with olive oil and cracked pepper
Penne all'arrabbiata
Zite with onion and breadcrumbs
Farefalle with cheese and mushrooms
Orecchiette with broccoli
Cannelloni
Pepper timballo

Too much pasta?

Vegetable pie
sweet and sour onions
Potato pizza
Calzone with vegetables

So he is a strict vegetarian then? Not with fish eh?

Hi snoozy have you tried looking at the vegan ideas on this site there are some good ideas including borscht and a nice recipe from the tanner brothers using artichokes and lemons which perhaps the others will eat as well

Hi Snoozy,
Think Martino was mixing up Vegan with vegetarian. I have a friend who is vegan (I hate having her over for dinner!) and can suggest meals of pulses. How about a lentil curry or spicy chickpea cakes or a meatless meatloaf made from pulses? Just a few ideas to get you started. Good luck

thanks will take all on board and c what i come up with. i have to cook fish for all the others on fridays and on mondays i have to do vegetarian so that not so bad , so for the friday slot i need a dish that is quick and not to time consuming!!! stir fry sounds good!!

I;m having a lovely juicy stuffed Portobello mushroom for tea tonight, you could use rice, herbs , chopped tomatoes, a small chopped leekand a little vege stock to moisten. Yum YumSmile
You could buy some Vegan Cheese from Holland and Barrett and make some cheese and whatever pies , pasties or quiches to freeze ahead, then you wouldn't be quite so stuck. You'd have to make the pastry with vegan marg though . There is a well known make that my daughter used to buy when she was in Halls of Residence last year, because she said it was the only one that didn't get pinched :D

You're right - she is my friend and I love her dearly but cooking for her is another matter. Going to restaurants with her is also hell as she gives the waiter the third degree"Are you sure this dish contains no cream?" etc. etc. It goes on for hours and when the dish arrives she dissects it, convinced that it contains a 'no no' ingredient.

The only item I can see on my list a Vegan cannot eat is the one with cheese. I should have said vegan cheese.

Strangely enough I do know what a vegan is so I am intersted to know why you think I dont?

Vegan. Does not eat meat, fish, dairy products, eggs, or any other animal product, sometimes called "strict vegetarians".

Of course the vegetarian and fish was a joke that I think Snoozy understood.

and then there gnocchi...

sorry martino u lost me a little ,did i say something wrong giving the impression that i thought u new nothing about vegans or is that for someone else?? and yes the gnocchi, idea sounds good, thanks martino and trudi. question for u both, if i make a stack of these gnocchi , can i freeze some?? and yes martino i did i take the veg fishy thing as a joke.lol. honest Smile Smile Smile

how about a quorn curry with tomato sauce and vegetables, I usually make one and add Tesco's non dairy cream made by Alpro - it's very good for cooking, doesn't split or curdle and make sthe curry taste fantastic.

I find a good sized vegan should last you at least another 3 meals. Try a nice red wine reduction and some roast spuds. I hear the freeze realy well

Snoozy,

Here is a couple of quick vegan fixes;

1. Starter - Vegan dips with carrot sticks, celery, cucumber etc. Most supermarkets now indicate on the packaging which dip is Vegan approved and for the non vegans they don't taste to bad !!

2. Dessert - Fresh fruit sliced such as Kiwi, Nectarines, Peaches, grapes etc. Creme Frais (Or the Vegan approved version) with Cater Sugar. Dip the fruit into the Creme Frais and then the Caster Sugar .... very nice !! Again one for everyone to share !!

I'ts so complicated and I try very hard to please my guests. I just throw a head of lettuce on the table with a bottle of dressing whilst the rest of us enjoy Lamb stew. Seems to work.

Snoozy.. FoT suggested I look at a website for a sweetcorn chowder recipe, and it happens to have some great vegan recipes on it. There is one for a mushroom and ale pie made with Black Sheep Ale looks scrumptious.. You could make little individual ones. I wonder if they'd freeze? Anyway well worth a look.

Yes, I should be shot...But it leads to a very good question. Everytime a vegan/vegetarian/fruitarian/ visits, we jump through hoops to prepare a nice meal. We make sure we go the "right restauarant" with them. That we don't dare let them ever consume anything against their self-imposed, again, self-imposed diet. When you visit them, do they prepare a meat dish for you? Do they? Of course not. It's all about them.
I've had it. Here's a head of lettuce and bottle of salad dressing. Have at it. The rest of us have made other choices.

I am not a vegetarian but I do not eat meat, ie. I eat mostly veg but include fish in my diet from time to time. When I have visitors I usually choose to cook a fish meal for them since that is what I am best at. Sometimes I offer a completely vegetarian meal. Sometimes I cook meat and provide lots of veggie dishes to accompany it. And oft and anon I find that the main vegetarian dish which I have made so I don't have to eat the meat is the dish that gets finished first.

I went out to lunch the other day and was 'treated' to carrot and orange soup made with chicken stock despite the fact that mine hosts knew I am a non meat eater. My stomach rebelled ... it was not pleasant.

Yes, it's my choice not to eat meat. No I don't expect my guests to eat a meat free diet when they come here. Last weekend I cooked chicken and it was declared by my two nephews to be the best they had ever had.

On the other hand I have been asked for vegetarian meals by my visitors because my vegetarian meals just happen to be very, very nice indeed.

In my opinion, it is us meat eaters, who make too much fuss over what to serve a veggie, rather than the veggie making a fuss. In my experience, most veggies are just happy having whatever is on offer without containing meat or animal products.

Ok veganism is a step further, but again, not a problem with a little forethought, I think it is just a matter of caring about your guests, which obviously Pinwald does not.

I have quite often been surprised at the reaction of some people towards the veggie here.Some seem to adopt a rather "bullying" attitude which is a real shame , I don't know anyone who treats my vegetarian views as a "religion", indeed when I go out with my lovely friends from school they take Everyone's views into account.. there are some who don't like Chinese food for example, and some who aren't keen on Indian.It's not a problem...
In all my thirty odd years of teaching I never enforced my views on the children, (you can't do that), and would show them how to cook their meat products as usual, in fact one of the best lessons used to be showing them how to cook minced beef properly, and make it into many different dishes!.
There would often be a couple of veggie children (the numbers are growing) who were never picked on by the meat eaters. It all makes for variety doesn't it?

my goodness i have been off line for too long. lol!!! all comments taken on board but hey, i have no probs with either vegans, vegitarians, non meat eating , just fish eaters what ever. everyone to their own and i can honestly say i would go to as much effort to please my guests, friends with the food that i cook whatever their preference!!! coz i love em all and want to please, and to me thats what cooking is all about!!! enjoying, and when i come up against something like this post i just see it as a challenge not a chore!!! kimi. thanks eveyone for the ideas, def gonna give some a go. Sorry to take so long getting back on this thread. A thread that has perhaps wandered.

My comment was to you Snoozy as you seem to suggest Vegans cannot eat pasta which is a strange thought to me. Perhaps the person who thought I knew not what a vegan is agrees with you but I see absolutely no reason whatsover why pasta cannot be served to a vegan.

Oh and yes you can freeze pasta.

Next week I have a vegan as a house guest. In Italy I guess you know what will be popular with her...

BTW my family are vegetarian with meat (they dont like fish)...
