Hi everyone, can anyone remember what Martin Blunos said you could do with the skirtie bits inside a scallop, I remember he said you could dry out the corals in the oven for crumbling on things, but can't recall what he said for the frilly bits. As a local fisherman has just given me a sack full (What a lovely man) I don't want to waste any. also can you freeze them for a while? And lastly my sister in law told me that if you place them in a hot oven for a minute or two they are easier to open, is that OK sounds a bit dodgy to me. A rapid reply would be great as I will have to sort these out when I get home tonight, Many thanks Sue.

Hi Sue501, I wouldn't keep the skirty bits, they are dirty and not very nice. Corals are good eaten with the scallop, or as you say,dried and sprinkled over deep fried cabbage (chinese seaweed). If you are going to cook the scallops straight away then it's OK to stick them in the oven for a couple of minutes.They are very easy to open though.Just remember not to overcook the scallops because they will be like rubber. If I add them to a sauce, I just give them long enough to heat through. Griddled a couple of minutes on each side only. So if you heat them in the oven to open them take this into account. Good Luck. I don't know about the oven and opening bit, but the skirts Martin said can be frozen untill you have enough and then use to make a lovely stock.

Martin Blunos said you can use the skirty bits to make a great tasting stock. Sounds good to me, they don't look very nice but you would be getting rid of them after making the stock. Lucky you to be given a bag of them - hope you enjoy them.

Hi Rustie, Thanks I just couldn't remember what he'd said to save my life.I'll see what they look like when I open them and make an informed decision whether to bin em or freeze em! The skirtie bits I mean. Goodness knows how long it's going to take me to open them all, but it will be worth it. Just solved that problem I've given half to my Boss!!Take care Sue.

It sometimes pays to be cheeky, I joked that if he couldn't keep his appointment with us because he was out on the fishing boat, he would have to turn up next time with a peace offering, well he's an honourable man and a sack of them were on the door step this morning caught last night, how fresh is that! trust me they will be relished to the max!
