Hi all, I have a cheese maker it makes cottage and cream cheese, have just made some cream cheese with it, its a bit sour can anyone tell me if you can add sugar to cream cheese to help sweeten it up?

Hi

I see no reason why not you cannot use sugar to sweeten.

I have made yoghurt quite a lot in the past and have read that you can add the sugar before you leave it to set. This way you keep the final texture. I do not know whether this would be the same for making cheese.

Just out of interest can you tell me a bit more about your cheesemaker ie where did you get it from and how much you can make.

Hi Matt

The machine i have is a Tefal Cheese Maker/Fromagere, it was bought at an auction at our local church, some time ago so i dont know if they are still on sale. 1 litre of cream makes 12-16ozs of cream cheese. Have just been looking through the internet and you can make your own cheese without a machine its abit more time consuming but can be done.

Well if you can get some whey you could make some ricotta over night just with cows milk and vinegar.

Michelle, I have an Austrian friend who was brought up on all cheeses and one was a slightly sour cream cheese He used to put some cheese on his plate add some castoa sugar and then put it on a bread roll or french stick, he said it was the only way they ate it. I tried this and it was nice. Go for it.Smile
